Guiding speed adjustment ( e.g. in GS Server) - what for?

In the setting of the GS server one can adjust the guinding speed - from default 0.5 to a different one, like 0.7. What is this for, what gets better or should get better?

It is the speed of the guiding correction, with the default being 1/2 of sidereal speed. Whether it is going to be better or not with a different setting is up to your local circumstances. I've never found this to be the case but YMMV.

↵I'm not quite sure what you or asking. Are you referring to the mount settings or the guiding software settings? Most mounts can be set to a speed to apply to guide corrections. Astro Physics recommends 1x (full sidereal rate). And I use that recommendation. A lower rate such as .5x would correct at 1/2 sidereal speed, or depending on the mount software, such as the older Vixen Sky2000, it would correct 50% of the guide correction. That, I think is a carry over fron manual visual star guiding. Now with software auto guiding, that is achieved through the software aggression rate. 

Which brings up the other question you may be asking. If you are referring to the aggression rate settings. That does not determine speed, but percentage. An aggression rate such as 5 (MaxinDL) would be 50% of the guide correction. That all depends on the seeing, I can be fooling around with those setting throughout the session, as seeing changes or find the best settings.
