I am looking for an app to help catalogue image files and provide some meaningful insight into what data I have stored over the years. If anyone knows a good application. I don’t mind paying for the right app and I use a relatively powerful Apple Mac.

I haven’t tried it, but Observatory looks quite promising.
It is still in beta and doesn't have a packaged version for Macs but it's a free image database:

If you just want to point it to a directory and have the software analyse what data you have, Lumidex is difficult to beat.
If you want a super flexible admin solution to put in any and all information you want to collect, you may want to have a look at Astroplanner. Learning curve and requires customisation to work for you, but when you're past those, it offers a great place to store it all. Also very convenient for planning your targets.
