I see many galaxy images that are blue, mine always seem to come out peach colored. What is the "natural" color of a galaxy?

I believe part of the deviation you observe is artistic freedom. For far galaxies you may have to define what you mean by "natural" color - with or without red shift.

Mostly, they are taking rather large liberties in defining what the colour would be. Same a stars. Oftentimes you only find them deep yellow and deep blue and they ain't.

This is the same with nebulas, many times I will color it a bit different to sow the different wave lengths that were captured.  Sometimes it is just fun to make it crazy colored, sometimes not.   Like other said, its mostly artistic impression.

Depends on the Galaxy.  Their color comes from star colors.  Big young stars are blue.. but they don't last very long.   Galaxies that are no longer producing stars will lack the blue you see in other galaxies.

According to this site, most stars are class M (red/orange).

Maybe the sensor of your camera is more sensitive for red than green and blue? My galaxies start in peach or purple, too. When I correct for the star colors, the galaxies change their color, too.
