When I started back in 2017, I was in exactly the same position as you. One site that helped me a lot finding my way through astrophotography software for the Mac was
macobservatory. When it comes to processing images, there are plenty of options on the Mac, from standard non-destructive editors like Photoshop or Affinity, all the way to arguably the most advanced software PixInsight.
As for data acquisition (the PC at/on your telescope), things are a bit more complicated. On a Mac, the platform to be used is
INDI. This is what ASCOM is for Windows. There are also several INDI-based 'all-in-one' hardware/software solutions, such as ASIAir, Stellarmate and Stellavita. But if you want to run a Mac at the telescope (e.g. Mac mini or MacBook), the astroimaging software of choice that is INDI-based is KStars. KStars is in very active development, has a very supportive user community, and can do pretty much everything NINA (the go-to ASCOM/windows solution) can do.
At the time, I went the KStars route and never looked back. It is a simple single install and you have all drivers, software modules etc. installed. New releases every two months, with support for latest equipment, new functionality etc.
When I set up a remote observatory two years ago, my software requirements were different. Now the most important aspect was automation and full autonomous operation. KStars would get there to some extent, but there are much better options out there. I chose Voyager Advanced, and that only runs on Windows and ASCOM. So I went through the full ASCOM/Windows installation and quickly realised again why I was so happy with KStars

. So for my backyard rigs, I will keep using KStars.
Please note that whether you go Windows or Mac for acquisition, the PC at the telescope-side can be small/simple. For Windows small Mele Quieter PC's are quite popular and for KStars a popular solution is a Raspberry Pi. Whichever you decide to use, you will eventually connect to that scope-side PC via some kind of screen emulation (like VNC, Windows Remote Desktop, Nomachine, etc) and can do that from the Mac that you have already.
