hello,
 I have a question that I can't seem to find the answer to. how do you actually control the eagle? is it like a team viewer software or sth similar?  I know they have a dedicated software for it but I want to use Nina. lets say that I set up my ring in the backyard with the eagle, could I polar align with it being connected with my phone? I was thinking to get a new mount, the NYX-101 and it has a slot for the qhy polarsope, do I need to have my laptop outside with me o can I temporarily connect it to my phone/ iPad to polar align it?

The eagle is its own windows computer, so you can install any software you need such as Nina, SGPro etc. But it lacks any keyboard or monitor so you need to connect to it in order to see anything and use it. This is typically done with another PC, laptop or tablet. You could use your phone as well but it will be quite fiddly to navigate round the screen and keep pulling up the keyboard to type in, but nothing stopping you!
To be specific you can use an app like Team Viewer, RDP or Remote Desktop (which has an iPhone and IPad app).
For my own workflow I have the eagle connected to my home wifi, then when I need to polar align and focus etc. I take my laptop outside and connect using RDP (I used to use an iPad with Remote Desktop). Then when all set up I come back inside and usually monitor it on my desktop PC also using RDP.
